I made a Coconut-ginger-curry chicken for dinner with coconut ginger rice. The kids LOVED it. They asked for seconds! I think we have found a new favorite. =)
3 Chicken Breasts ( You can use whatever parts you like)
1/2 cup chopped up fresh ginger
1/2 cup coconut oil ( I'm going to try coconut milk next time)
1-2 tablespoons curry ( more or less to taste)
2 cups water
Cover with tin foil.
Back at 350 for an hour
1 1/2 cup chicken drippings
1/2 cup water
1 cup rice.
Cook as you would any rice.
I'd post a picture but all you would see if fat happy kids and dirty dishes. =)
